In the present study, an efficient and rapid method for the preparation of high-purity typical alkylamides from Zanthoxylum bungeanum pericarps using medium-pressure liquid chromatography (MPLC) was developed. Under the optimized conditions using mobile phase of methanol: water (70:30, v/v) at a flow rate of 25 mL/min, hydroxy-α-sanshool with a purity of 98.75% could be obtained for one run. Sensory evaluation and electronic tongue analysis of hydroxyl-α-sanshool was performed, and the aftertaste of bitterness and aftertaste of astringent were found to be more representative in the analysis of the numbness of Chinese sprickly ash, which has not been reported in the literature before. An electronic tongue prediction model for the numbness evaluation was established: Y=20.452X1-7.594X2-2.876, R2=0.973. Where Y is sensory evaluation value based on the 15 cm linear scale method , X1 and X2 are aftertaste from astringency and aftertaste from bitterness, respectively. The evaluation model can be used for numbing intensity evaluation of Z. bungeanum amides and extracts.
